Evald Brasserie & Café

Evald opened on July 18, 2003, at “Papirfabrikken” in Silkeborg. Evald is named after the owners' grandfather, Holger Evald Sørensen, who was a loving man with a big heart.

Evald is inspired by the French brasserie and café culture. Located at Papirfabrikken in the center of Silkeborg which is a busy city in the heart of Jutland's nature. During the summertime, you can sit on the terrace with Remstrup stream in front of you, just 700 meters from the forest and 500 meters from the city center.

The atmosphere at Evald is very special, just as the owners' grandfather would have it. It’s relaxed, and “hyggelig”.

It matters to us, that the food we serve is homemade and of quality products from local suppliers and manufacturers. In that way, we help secure local and Danish workplaces.

We joined REGA because we want to be better. The collaboration with REGA is a long journey, where we, together with other restaurateurs from all over the country, develop in a sustainable and socially responsible direction. Through dialogue and co-operation we get better at making demands towards suppliers and manufacturers, focusing more on sustainability, anti-corruption, and human rights
